1. Copy components/com_contact/views/contact/tmpl/default_form.php to templates/{your template}/html/com_contact/contact/default_form.php.

2. Change <?php echo $this->form->getLabel('contact_email'); ?> to Email and so on for every field

This is for joomla 3.2, but it is similar for joomla 2.5, the file locations are the same.
